Locally called “Ovrata”, the Gilt-Head Bream is easily recognizable by the golden band between its eyes. This species is highly prized in Adriatic cuisine due to its delicate, white flesh and mild, sweet flavor. Gilt-Head Bream is commonly farmed but also caught in the wild. It is traditionally prepared grilled, baked with Mediterranean herbs, or cooked in salt crust to preserve its moisture.
