Dentex

Known locally as “Zubatac”, the Common Dentex is a highly esteemed species in Croatian waters. It has a robust body with a distinctive bluish-silver coloration and sharp teeth. Dentex inhabit rocky and sandy bottoms and are known for their elusive nature, making them a prized catch among anglers. In Croatian cuisine, Dentex is often baked whole, sometimes encased in a salt crust to retain moisture, resulting in tender, flavorful flesh.
